Bone-in New York steaks are a prime steak and are also referred to as strip steaks. This tender cut has a decent amount of marbling, leading to great flavor and texture.
CAST IRON STEAK
Bring the steak up to room temperature. Place a cast iron skillet in your oven and heat your oven to 500 degrees. Lightly drizzle oil on the steak and season with salt and pepper. Once the oven has reached 500 degrees, remove the cast iron skillet and place the steak on it and let it sit for 3 minutes. Flip the steak and put it back in the oven for another 3 minutes. Remove the steak from the oven and place it on a plate and cover it with foil and let it sit for 3-4 minutes. The steak will continue to cook.
This will produce a medium to medium rare steak, based on the thickness of the cut. Adjust the timing slightly for different preferences in temperatures.
